Cakes / Icings / Fillings
You will never get a frozen cake from me. Every cake I bake is lovingly made from scratch. I use natural, gourmet, farm-fresh, and homegrown ingredients to craft yummy artisan fare wedding cakes and other delicious celebration confections.

I use quality unbleached flour, Homemade Gluten-Free flour, local farm-fresh fruits, honey, jams, and syrups, homegrown herbs, pure cane sugar, local free-range eggs, local pasture raised dairy, real vanilla extract, decadent cocoa, non-hydrogenated oils, and other gourmet ingredients to craft all of our products. Many ingredients we use are also certified organic. My fondants and fillings are homemade without that sickly sweet after taste.

We do all Lactose Intolerant cakes as well as dairy-free, gluten-free, wheat-free?

Since each cake incorporates so many variables, it's impossible to offer a hard-and-fast price list.  We take into account the number of servings, the complexity of design and those features important to the celebrants.  Sometimes a smaller cake may take longer to create than a larger one, and, therefore, it will be priced higher per slice (the basis for pricing by most bakeries).  Our cakes are created on a per-order basis, but we try to present several possible variations from which to select.  Novelty and sculpted cakes usually start at $4.50 per serving.  Pricing for wedding cakes begins at $3 per serving.

How to make fruit topping for pies and cakes!

I love cheesecake, and I especially love cheesecake with a warm blackberry topping.  Of course, I make strawberry, cherry, and a host of other berries such as huckleberries that my son-in-law loves. I wanted to share this recipe with you because it is so easy to make and family and friends love it.

Cook over medium heat for about 4 to 5 minutes, or until the berries have started to break apart and the juice starts to slightly thicken.

In a small bowl, mix the cornstarch with 4 tablespoons water to make a slurry. Whisk it together until it is incorporated.

Pour the cornstarch/water mixture into the berries. Let it boil for another 1 to 2 minutes, then turn off the heat and allow to cool.

Your going to continue to let it bubble up for a couple of minutes until the mixture is very, very thick. Then set it aside and let it cool until lukewarm or room temperature. Depending on my time frame I will speed this along by setting the pan in a big bowl of ice water for 15 minutes or so.

Pour the blackberries over the cake or cheesecake and place the pan into the fridge to chill and set for at least 2 hours.

There is nothing more awesome than baking your own homemade desserts.

What is a Marionberry?

One of the most in-demand berries of the summer season is the Marionberry. Meet the marionberry, a large, round, blackberry that's a cross between the chehalem and olallieberry breeds. It's known as the "Cabernet of blackberries," and fans of the fruit are obsessed with its earthy, complex, sweet-yet-tart flavor.
And unless you're in Oregon, chances are you'll never come across it in your local supermarket. That's because "Marion is too soft to ship anywhere fresh," and "I'm sure most of the fresh fruit is consumed locally, and I'm sure because of it, there's a local love for it." Oregon's United States Department of Agriculture breeding program, the marionberry is the most common blackberry in the state and more than half Oregon's blackberry crop are marionberries. In fact, despite the fact that Oregon produces between 28 and 33 million pounds of marionberries annually, most of the harvest never make it across state lines even frozen.
